Dubliner is a hard Irish cheese made with pasteurized cow's milk. The recipe was originally developed (by accident!) in 1990 by John Lucey, a food science Ph. D. student.

Dubliner cheese is an Irish cheddar cheese from Kerry Gold. It is hard to pinpoint an exact description for it but let's say it is like a slightly sweet cheddar cheese with a nuttiness like a Swiss cheese and it melts beautifully!

In 2018, archeologists from Cairo University and the University of Catania reported the discovery of the oldest known cheese from Egypt. Discovered in the Saqqara necropolis, it is around 3200 years old. Earlier, remains identified as cheese were found in the funeral meal in an Egyptian tomb dating around 2900 BC.

I find this Kerrygold Dubliner is pretty sharp with a flavor pretty similar to parmesan with a touch of aged cheddar and a hint of sweetness. The texture of the cheese is quite firm as you can see here.
