Cold brew coffee is usually made by steeping coffee in water for a number of hours at cold or ambient (room) temperature. This slow, low temp brew makes cold brew taste very different from hot brewing the same type of coffee beans: mild chocolate and mellow, low acidity fruits are common flavor notes.

In 1950, William Rosenberg had an epiphany. After creating a delightful range of donuts for the people of Quincy, Massachusetts, he realised that everyone loved to dunk them in their coffee. The delicious combination of donuts and coffee became an experience to savour, and people kept coming back for more.

The cold water slows down the extraction of the tasty parts of coffee. AND it actually changes what is extracted and what is left in the ground coffee. Compared to hot brewed coffee, a cup of cold brew can be 60% less acidic and bitter. That happens because the acids that turn to bitter don't get extracted.
