Mix together eggs, bell pepper, tomato, spinach, ham, and onion in a large bowl. Ladle egg mixture over warm potatoes. Top each muffin cup with a mozzarella cube. Continue baking until eggs are set, about 20 minutes.

But on days when you're pressed for time and need a quick, filling source of protein, egg bites are the perfect solution.

Rather than baked in an oven, the egg bites are cooked in a heat-controlled water bath, which helps give them their soft and fluffy, souffle-like texture.

“We have a special passion regarding sous vide cooked eggs, as eggs are a very versatile, yet delicate food product, which requires the precision the sous vide technique provides,” says Cuisine Solutions Executive Chef Bruno Bertin, who helped develop the Egg Bites.

Ingredients

1. Extra virgin olive oil or bacon fat.
2. 1/3 cup chopped onion (green, red, or yellow onion), optional.
3. 1/4 pound of Mexican chorizo sausage, removed from sausage casing.
4. 3 tablespoons raisins, soaked in hot water for 10 minutes and drained.
5. 5 to 6 eggs.
6. Salt.
7. Tortillas, optional.
8. Cilantro, optional.
