Bone-in chicken wings come from the actual wing of the bone and come in two shapes–drumstick or flat (also called wingettes). Some people are drumstick-only, while others stick to the flat wings.

On Tuesday, Pizza Hut pledged to serve only antibiotic-free chicken wings, both bone-in and breaded-boneless, by 2022. The decision comes after the chain decided to use only antibiotic-free chicken for its pizza toppings last year.

Drums, or drumettes, resemble small chicken legs, with a single, main bone running through the middle. Flats, or wingettes, get their name because they're, well, flat. They have two smaller bones that run the length of the wing.

How Do They Make Boneless Wings? Chefs make boneless wings by cutting boneless, skinless chicken breasts into wing-sized pieces, breading or battering them, and then deep frying them until golden brown.

Boneless wings are less expensive than true chicken wings. Each chicken only supplies four wings (two drumettes and two flats), so there is a disparity between supply and demand. Boneless wings are made from chicken breast meat, making them easier and cheaper to produce in bulk.

While you can bake or grill them, the traditional way to make chicken wings is to deep-fry them. Bone-in chicken wings can take a bit of time to cook because the bones provide change the thermal profile of the wings.

The advantage with deep fryers is that Pizza Hut can offer bone-in wings that are breaded or unbreaded, and fried boneless wings. You can have them sopping with your choice of eight sauces, or you can eat them naked. I mean you can eat them without sauce.

Breaded means there is some kind of coating on it like bread crumbs, batter, or flour, which is done before the cooking process and gives the wing a crunchy outer coating and another flavor layer. Naked means no coating just cooked chicken,both are typically sauced afterwards.

In 2003, thanks to the rising popularity of chicken wings, Pizza Hut launched WingStreet restaurants, and today offers eight sauce options: Garlic Parm, Honey BBQ, Hawaiian Teriyaki, Buffalo Mild, Spicy Garlic, Buffalo Medium, Buffalo Burnin' Hot, and limited-time flavors.

Wings could be baked in ovens that the shops already had; dipping sauces complemented pizza crusts nicely. Pizza is largely a carbohydrate and wings are a protein. It seemed to resonate with the palates of consumers. To open a new pizzeria usually required no special equipment besides a freezer and some deep fryers.
